Low Calorie No-Bake Cheesecake

A Low calorie strawberry cheesecake recipe!

Graham Crust

  • 1/3 cup graham cracker crumbs
  • 1 1/2 tbsp unsalted butter, melted


  • 4 ounces low fat cream cheese half of a block
  • 1/3 cup greek yogurt, plain, o% strain in cheese cloth if watery
  • 1 tsp vanilla extract
  • 3 tbsp stevia, granulated I used Truvia

Strawberry Topping

  • 1/4 cup stevia, granulated I used Truvia
  • 15 whole strawberries, frozen
  • 1/4 packet gelatin optional if you want firmer set topping


  • Mix butter and graham crackers crumbs and divide evenly between three jars. Press down to form crust at the bottom of the jar
  • With an electric mixer, blend together cream cheese, 3 tbsp stevia, yogurt, and vanilla extract until smooth
  • Divide and place creamy filling into each jar
  • On medium heat, stir together gelatin, strawberries, and remaining stevia until a thick sauce forms. How much water you boil off will depend on how thick you love your top layer. No wrong answer here 🙂
  • Allow strawberry topping to cool before you place it in your jars
  • Keep in refrigerator for up to one week
