Vegan 1-Bowl Black Bean Brownies

  • 2 flax eggs (2 tbsp flax meal + 6 tbsp water) (let rest for a few minutes)
  • 1 can black beans drained and rinsed
  • 3 tbsp coconut oil melted
  • 1.5 tsp baking powder
  • 1/3 cup water
  • 1/2 cup granulated stevia
  • 3/4 cup cocoa powder
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • walnuts optional


  • Preheat oven to 350.
  • Blend all ingredients in food processor until mixture is smooth
  • Evenly pour batter into a muffin pan
  • Top with walnuts (optional) or other nuts.
  • Bake for 30-35 min (it should be soft in the middle).
