  • 2 cups egg white
  • 4 eggs
  • 1/4 cup red bell pepper diced
  • 1/4 cup white onion diced
  • 1/4 cup cheddar cheese grated
  • 1/4 cup roma tomato diced


  • Preheat oven to 350
  • Finely dice vegetables
  • Mix all ingredients in one bowl
  • Pour mixture evenly into a muffin pan (about 1/3C each)
  • Bake for 25-30 minutes
